Director of the Month - Don O'Melia

The Holiday Season is here and it is a season of warm memories, friendship and families. Along with the camaraderie of family and friends my warm memories were of artichoke dip, pineapple puff, hashbrown casserole and ranger cookies. I would like to share these recipes with you.
Pineapple Puff
2 loaves soft white bread
6 eggs
1 cup sugar
1 cup melted butter
1 large can crushed pineapple with juice

1. Butter a 9x12 inch baking pan
2. Cut crust off bread and cube. Place in baking pan
3. In a large bowl, beat eggs, add sugar, melted butter and pineapple with juice. Let stand for 15 minutes
4. Bake at 350 degrees for 30-40 minutes
Artichoke Dip
1 cup mayo
1 cup grated parmesan
13oz marinated artichoke hearts
2 cups shredded mozzarella
1½ tsp garlic powder
1 tsp paprika

1. Preheat oven to 350 degrees
2. In a large bowl, mix mayo, parmesan, artichokes, mozzarella and garlic powder
3. Pour into a 8x8 inch baking dish
4. Bake for 30-40 minutes
5. Sprinkle with paprika and serve warm with rye bread
Hashbrown Casserole
12 hashbrown patties or 12 cups loose
1 quart plus 1 cup half and half
1 cup grated parmesan cheese
1/6 cup grated onion
1 cup butter
Salt and pepper to taste

1. Butter a 9x12 inch baking dish
2. Place potatoes in pan
3. Mix ½ & ½ parmesan onion salt and pepper
4. Pour mixture over potatoes let stand 15 min.
5. Cube butter and dot over potatoes
6. Bake at 350 degrees for 30-40 minutes
Ranger Cookies
11/2 cups butter
1 ½ cups white sugar
1 ½ cups packed brown sugar
3 eggs
2 tsp vanilla
¾ tsp baking powder
½ tsp salt
1 ½ tsp baking soda
3 cups flour
3 cups rolled oats
2 cups raisins
1 cup coconut
1 cup nuts any kind will do I use peanuts

1. Cream butter and sugars
2. Add beaten eggs and vanilla
3. Add all other ingredients
4. Bake on ungreased cookie sheet 8-10 minutes at 375 degrees
